White Chicken Chili
We’re going to make this post short, easy and to the point. This recipe is great for people like me that have had weight loss surgery; but it’s not a pre-qualifier! This recipe can work for people just trying to eat a balanced meal. It can work for people who are needing to lose weight and did NOT have weight loss surgery.
This white chicken chili recipe is packed full of amazing macros. It’s high protein, low(er) fat, filling, full of taste and just plum yummy!!
If you love chili, I really think you’ll love this version.
-2lbs chicken breast or tenderloins
-4 cups low-sodium chicken broth
-3.5 cups great northern beans (or 2 15oz cans)
-2 4oz cans of diced green chiles
-1 diced onion
-1 can whole kernel corn
-1/4 cup cilantro
-1 tbsp Minced garlic
-2 tsp Cumin
-1 tsp Oregano
-1/2 salt, pepper, and Chili powder
-1/4 tsp cayenne pepper
-1 8oz blocks of low-fat cream cheese
-Place all the ingredients in the crockpot EXCEPT the cream cheese.
-Cook on low until your chicken is cooked through.
-Take the chicken out and shred
-Place the shredded chicken back in the crockpot
-Add your cream cheese and let it slowly melt
-Stir all ingredients together and serve!
Makes 6 servings
